This is THE definitive Thai yellow curry recipe. Ever since I moved from LA to Albuquerque I’d been missing the delicious yellow curry at my favorite restaurant Sticky Rice. This recipe nailed that flavor 100%! This was probably the first recipe I’ve made that felt restaurant-level good. Whenever I have the energy I find myself revisiting this one again and again.

Wow! We had a mix of prawns and fish and it hummed! The potato took longer than the recipe , so I’d slice even thinner than what Nagi says – and give another few minutes than the carrot.

Wow. This is truly one of the most delicious recipes I’ve ever made. I moved to the midwest and have been craving yellow Thai curry for over six years. The restaurants in my area just aren’t very good. I can say with confidence this might be the most delicious Thai yellow curry I’ve ever had – even better than the ones from my favorite restaurants that I’d been craving! I spent hours and hours on end in the kitchen for this one, but it was worth every second. Thank you for such detailed instructions as well. PS – your perfect rice recipes also changed my life. Thank you so much! Can’t wait to make more of your dishes. 🙂
